でーは、2008年を振り返りまして、思い出　その２です。

分不相応に？高級料亭・割烹を４軒も！！
9月に集中的に廻らせていただきましたよね。

お声いただいて、即決、快諾した企画ものです♪
その前半をダイジェストでご紹介。

１軒めは。

080915　京都　高台寺　「京大和」　＜京都の料亭 割烹特集－１＞

9月10日　訪問：

お庭も見事、眺望も素晴らしい高台寺に。



個室、「紅葉の間」。


お料理の一部を～
先付：萩見立て寄せ豆腐



海老、枝豆、小豆、木耳、美味出汁、摺り柚子。


焼八寸：魳生雲丹包み焼き（かます、と読んでね）

射込み銀杏、樋湯葉と湿地の白和え、絹かつぎ、はじかみ。


香ばしく焼き上げたかますの中は濃厚な旨みのウニ～


留肴：名残鱧と松茸の玉〆

名残鱧、銀庵、梅肉。


炙り鱧には梅肉がちょこっと載せてある。そして松茸～、ぜいたくな一品でした♪

東山中腹、眼下に古都の街並みを一望できるロケーション。
3000坪の大庭園・・・

9月14日　訪問：

嵐山は渡月橋北詰にあります「熊彦」さん。
「たん熊　北店」のグループです。




川を望む広いいいお部屋。


八寸：ずんだ和え、無花果胡麻味噌和え、笹巻寿司、鳥味噌松風、
　　　　栗茶巾、奉書巻き、秋刀魚養老巻き、銀杏アンペイ


品数たっくさんでビックリ！


さんまは白板昆布に巻かれて。笹巻の上品なお寿司も～

お凌ぎ：秋茄子、すり流し、雲丹、ジュレ出汁



ジュレ出汁のウニちゃん、これはなかなか♪　美味しかったね～

御飯：鮭イクラ飯、香の物


京都としたら意外な北海道ごはん？


銅の羽釜で、おかわりOKやった！


２軒めで、少しは落ち着いて
