080922 京都 「割烹 やました」 ＜京都の料亭 割烹特集－３＞

嬉しいことに、めったに行かない、いや行けない京都の料亭で
お昼から会席料理を週に２度！！いただきました。

京都の料亭 割烹特集：サントリーグルメガイド
「いろんなブロガーが料亭や割烹を体験レポート！？」

その中でぼくが行ったんは、
京都　高台寺　「京大和」
京都　「熊彦　嵐山店」　
の２軒でーす♪

で、９月１７日。
３軒めのお店は、カウンター割烹。
気が張らずに食べられそう、こういうお店も楽しみ～
木屋町の御池と二条の間ということやから・・・

三条辺りから木屋町通りを歩きます。

高瀬川にかかる三条小橋。


風情ある木屋町通りを北へ。


御池通りを渡り終えると・・・

はい、雰囲気も落ち着いてきた街並みに、

ありましたやん、「割烹　やました」さん。

おじゃましまーす♪


入ると、長いカウンター。１５席あるとか。

このお昼はお客４人に板前さん４人、ぜいたくやねえ。


菊のコース、6300円をいただきましょう。

まだ暑い日、やっぱりビールがウマイ～

ザ・プレミアムモルツ。

付き出し：鱧の肝、きぬかつぎ、ばい貝

鱧の肝、おいしいです。あんまりお目にかかりませんね。


ばい貝、きれいに取れました。きぬかつぎは小芋。

二品めは
お造り：鯛、かんぱち、こしび、剣先

王道、ってカンジやん♪バツグンの鮮度やわ。


鯛にかんぱち。こしびはしびまぐろの小ぶりなんやろな。

瓶のプレミアムモルツが冷えてないとのこと。
では、グラスの生ビールにチェンジ～


炊き合わせ：蛸旨煮、蛸の子、小芋、ミニおくら、栗

蛸の子、いい食感でした。

焼き物：鯛の幽庵焼、網脂巻き


柚子の香りの風味豊かな焼き鯛に豚の網脂！

ジューシイな旨みでこれはいけます。意外な組み合わせやん♪

カウンターやと調理も眼前で見られて楽しい。

これは別のお客さんのオコゼをさばいてはるとこやん。

さあて品数も料亭に遜色なし！お次は？

蒸し物：とろろ蒸し

ねっとり山芋にええ塩梅のあんが絡みます。

上品な優しい味わい～

揚げ物：笹鰈の唐揚げ


じっくり揚げられたカレイは頭からぜーんぶ食べられます。

割烹らしい一品、ビールにも合う！

酢の物：毛蟹

夏のカニと言えばこれね、大好き～


みそと和えて食べると絶品やん。

品数だけやない、中身も料亭と遜色なし。
割烹らしい、ドンと素材の旨さがストレートでええやん。

ご飯：姫ご飯、赤だし、香の物


竹皮に包まれたおこわ。


赤だしも。


それでは最後。
水物：いちじくのコンポート


シナモンが利いてたね。

さっぱり味でした。

はい、全部で９品。
特に魚介が美味しい。割烹やから当然？
いえいえ、こちらは評判の名店とのこと。
値打ちあるお昼のコースでした。

２時間以上かけてゆっくりいただきましたよ～
ここは夜にも、お料理とお酒を楽しみに来てみたいです！

今回特集された料亭や割烹はお料理さながら、
デザートも美味しそうですよね！あ、美味しいんですね！
和の料理人が作るいちぢくのコンポート、興味あります。
お昼のコースが3000円代からなら手が届きそうです（笑）

はじめまして！同じ企画に東京から参加させて頂きました。
今回の京都ツアーで感激したのは鱧のおいしさでした。鱧の肝というのも珍しいですね。これはおいしそう。
そういえば僕も京都でいちじくのコンポート食べました。こちらはアールグレイがかかって美味しかった。。さすが京都の料亭ですよね。何もかも美味しいものばかりでした。
また遊びにきますのでよろしくお願いします！

名残鱧なんて呼んでましたか。
水物は梨、ぶどうが多かったけど
イチジクも料理によく使ってました。
晩夏～初秋のメニューを堪能できました。
