081001 京都 「木乃婦」 ＜京都の料亭 割烹特集－４＞

10月でーす。
早いなあ・・・　今年は寒いし～

先月から京都通いで京料理３軒。
9/10　京都　高台寺　「京大和」
9/14　京都　「熊彦　嵐山店」　
9/17　京都　「割烹　やました」

京都の料亭 割烹特集：サントリーグルメガイド
「ブロガーが料亭や割烹を体験レポート！？」

この企画にお呼びいただきました。

４軒めはこないだの日曜、２８日やった。
これが「京料理三昧」のラストやで～

四条烏丸から南に歩いて５分。


新町通り、街中に見つけましたよん。

前にはこんなクルマがとまってた。

はい、京料理「木乃婦」さん、きのぶ、と読みます。


奥に玄関が～

ていねいにお出迎えいただき・・・

２階に～、もちろん個室。

ガラス越しにお庭が望めます、やっぱり料亭！
カーペット敷き、円卓、掘りごたつ式で足が下ろせます。ラクチン！

天井も凝ってますね。

まずお茶が出ます。

お飲み物は？はいザ・プレミアムモルツやね！

お約束～？

では素晴らしいお料理を・・・

八寸：いちじくコンポート、餅銀杏、　焼き松したし、
　　　　とろ握り、甘酢生姜、松風、渋皮栗寒露、子持ち鮎
しょっぱなからスゴイ内容です。

甘いもんから松茸も。


とろ握りは絶品！八寸からこれには驚きやったわ。

お次は～

ふたつきの器に盛られたんは

造里：鯛、槍烏賊、車海老、あしらい一式



鯛はおろしぽん酢で、いかは醤油でいただきました♪


ぷりぷりの車えび～、ウマアイ！！

次は何？楽しみ！

お、これは・・・

御椀：土瓶蒸し、鱧、松茸、水菜

待ってました。秋の味覚やん♪

酢物：菱かに、若布、庄内麩、帆立、　
　　　　黄身酢、生姜、オクラ


ほたてとかに。

菱がにとはガザミと呼ばれるわたりがにのことね。

はい、ここらでやっと前半終了。
恐るべし、京料理、懐石のすごさやね・・・

では、後半戦へ～
焼物：子持ち鮎炭火焼、酢蓮根

ぷっくり、はみ出た卵がええやん。香ばしく焼かれてます。


たで酢でアタマからがぶりと丸ごといきましたあ！

ここで変わったお料理が？

炭火に置かれた小鍋です。


中身はふかひれ、胡麻豆腐！
シニアソムリエの資格をお持ちの三代目考案の創作料理とか。
小鍋：フカヒレ、胡麻豆腐、九条葱、露生姜
でした！

ここで
御飯：松茸釜御飯　赤出汁仕立て、香の物


ご飯は羽釜ごとやで～



松茸３品め、ええやん。赤出汁の御椀も栗の模様、秋やなあ・・・

ここでデザート。シメやね。
水物：巨峰とグレープフルーツのゼリー寄せ、バニラアイス


洋風です。しゃれたお味。

グレープフルーツの酸味がきいてます！

この後、三代目からご挨拶もいただきました。
ワインの品揃えも多く、ワイン献立もあるとのこと。
お寿司もあるし、デザートも充実！高級料亭やのに新しい味もいっぱい。
やる気を感じさせる若きリーダー、がんばってください。

お見送りもいただきました。
ごちそうさまでした！！

羽釜に残った松茸ご飯！
